Apricot, Celery and Walnut Stuffing

Ingredients

  • 275g / 10 oz breadcrumbs
  • 100g apricots chopped
  • 2 sticks of celery chopped
  • 2 onions finely chopped
  • 100g / 4oz butter melted
  • 2tbl fresh mixed herbs – ie parsley sage chive finely chopped
  • zest 1 lemon
  • 50g / 2oz walnuts chopped
  • salt and pepper

 

Method

1. Cook the onion and celery in the melted butter.

2. Then add to the remaining ingredients and use to stuff the turkey.
