Lunch Box Fillers
Make sure you cut the sandwiches in four so that they are easier to eat, especially for younger students.
Homemade scones are also great for lunch boxes or you can buy very good scones.
Suggested Filling
Tuna & cream cheese with a little rocket or any lettuce.
Eggs are a great sandwich filler. Mash up some hard boiled eggs, add a little non fat mayonnaise, a little pepper and a little shredded lettuce.
Emmental is a lovely cheese to put with sliced ham and a little lettuce.
Chicken with some low fat mayonnaise and some chopped basil.
Salad sandwiches using the flesh of tomatoes, chopped lettuce, some chopped egg & chopped cucumber. Add a little hummus to bind.
Break Times
Carrots, celery or cucumber with hummus or low fat mayonnaise.
Banana and avocado mashed together with a little lime juice and brown bread.
Cheddar cheese and crackers.
Peanut Butter spread on rice cakes and topped with banana.
Yogurt of choice and mandarin orange or banana.
