Jim Murphy from Tullow, County Carlow, will captain Ireland’s team at the prestigious World Butchers’ Event in Paris this March.
Mr Murphy, a seasoned butcher, will lead a team of six senior butchers, including his wife Bernadette, along with two apprentices eager to learn from the best.
The competition is a grueling 3.5-hour challenge where participants will be tasked with expertly cutting beef, pork, lamb, and chickens.
The team, who previously won the coveted “Best Sausage in the World” title in 2022, will face off against 15 teams from around the world, including competitors from New Zealand, Brazil, the USA, Iceland, and the UK.
Mark Williams, from County Laois and one of the team members, shared his excitement with KCLR News, calling the event “the Olympics of butchery.”
With a strong track record and a wealth of experience, Ireland’s team is ready to showcase their skills on the global stage in what is considered the ultimate competition for butchers.
