Bicarbonate of Soda and Baking Powder
Bicarbonate of soda is an alkaline powder that reacts when it come into contact with an acid liquid, such as buttermilk, to produce carbon dioxide to make the bread rise, it works more quickly then yeast but it is worth giving the dough a rest before you bake it to allow the soda time to start working.
Baking powder contains both alkaline and acid, which only reacts when liquid is added hence doughs containing baking powder should be baked straight away
