TERIYAKI
Grate a thumb sized piece of ginger then mix with 6 tbsp soy sauce, 3 tbsp mirin, 3 tbsp sake and 1 tbsp caster sugar.
Good for salmon, chicken or steak
CLASSIC BBQ
Put 2 tbsp red wine vinegar, 5 tbsp tomato ketchup, 1 tbspDijonmustard, a dash of Worcestershire sauce, 1 tsp chilli powder and 3 tbsp dark brown sugar in a small pan. Simmer for 2 minutes.
Good for pork, ribs and sausages
THAI SWEET CHILLI
Finely chop a thumb sized piece of ginger, 2 red chillies, 1 stick of lemon grass, 1 clove of garlic and mix with the juice of 1 lime, 1 tbsp fish sauce, 1 tbsp groundnut oil and 2 tbsp caster sugar.
Good for beef and fish
SATAY
Put 3 tbsp smooth peanut butter, 2 tbsp soy and 2 tbsp sweet chilli sauce in a pan with 4 tbsp water. Heat gently, whisking until smooth.
Good for chicken
MOROCCAN
Mix 4 tbsp harissa, the juice of 2 lemons and 3 tbsp olive oil.
Good for lamb
CHINESE 5 SPICE
Mix 1 tbsp Chinese 5 spice, 4 tbsp soy sauce, 2 tbsp sesame oil and 2 tbsp groundnut oil
Good for chicken and pork
CIRTUS AND HERB
Roughly chop a small bunch of both parsley and basil. Mix with the juice of 1 lemon, 1 orange and 3 tbsp olive oil and season well.
Good for fish and chicken
TANDOORI
Mix 300ml natural yoghurt, 2 tbsp garam masala, 1 tsp turmeric, 1 tsp chill powder, 1 grated onion and 1 clove crushed garlic.
Good for fish, chicken and lamb
HONEY MUSTARD
Mix 2 tbspDijonmustard, 2 tbsp runny honey, juice of 1 orange and 2 tbsp sunflower oil.
Good for pork
HOT SWEET AND SMOKED
Mix 1 tsp smoked paprika, 1 tsp chilli powder, 1 grated red onion, 4 tbsp olive oil, 1 tbsp honey and the juice of 1 lemon
Good for lamb
