HOT SMOKED TROUT WITH POTATOES

This dish can also be cooked in little ramekins and served as a starter served with a lemon wedge

Ingredients

 

v  3 or 4 trout fillets depending on size

v  4 to 5 large potatoes boiled in their jackets then sliced thinly when cool

v  juice of 1 lemon

v  300ml cream

v  100g/4oz  grated white cheddar

v  salt and pepper

v  50g/2oz  soft butter mixed with 2 cloves of chopped garlic

 

 

Method

Preheat the oven to 190C/170C fan-oven/Gas mark 5

Grease a large sauté dish with the garlic butter.

Now place a layer of potatoes in the base

Lightly flake the trout and place on top of the potatoes making sure you cover the potatoes fully

Sprinkle over the lemon juice and add pepper and a little salt.

Finally place the remaining sliced potatoes on top and pour over the cream

Sprinkle with grated cheese and bake for approx 45 mins

Serve with mixed green salad for a delicious supper dish.
