Ingredients:
- 2 tbsp olive oil
- 6 extra- lean sausages
- 1 onion, finely chopped
- 1 garlic clove, chopped
- 500 g tomatoes, skinned, deseeded and chopped
- 1 tsp dried oregano
- 350 g/ 12 oz penne or rigatoni
- 1 tbsp red pesto
Method:
Heat oil in a frying pan and cook sausages over a high heat for 8 minutes until they begin to brown. Remove from pan and cut into 2.5 cm pieces.
Bring a large pan of salted water to the boil.
Fry onion and garlic for 5 minutes. Add tomatoes, sausage and oregano. Cover, reduce heat and simmer for 10 minutes. Cook pasta for 10- 12 minutes.
When sauce has thickened, stir pesto in.
Drain pasta and stir through the sauce.
